A few weeks ago, we discovered that our local Costco has the most ah-mazing king crab legs!! They've become a bit of an obsession in our household, and last night was another one of our crabfests.
BUT...this time I couldn't finish. I'm doing a 90-day transformation challenge with Oxygen magazine (if you are female and have ANY interest in fitness, you really must pick up a copy!) and have both cleaned up my diet and reduced my portions. Halfway through my wonderful treat, I just couldn't eat anymore.
What to do with this lovely, sweet crab? How about a salad?
My first impulse was to grab some mayo and celery and call it a prep. Wait...mayo? Really? I can do so much better that that...here's the recipe!
8 ounces lump crab meat (king if you can get it!)
2-3 tablespoons Bolthouse Farms Cilantro Avocado dressing
Juice of one lime
One ear of corn, cooked and kernels cut off (frozen would work in the off season)
Enough spinach to fill the bowls
Preparation is pretty much what you think!
Mix crab with dressing, lime juice, cucumber and celery. I did this the night before so the crab could marinate and really absorb the flavors.
Fill the bowl with spinach and top with the rest of the ingredients.
